Hello Friends – It’s Hump Day and Earth Day rolled into one!
Earth Day brings back great memories for me. I remember celebrating Earth Day back in my college days at Bloomsburg University. Our Earth Day celebration included “laying out” on the roof of my sorority house covered in baby oil and grilling cheap steaks to go with our very cheap beer. Boy, how life has changed!! I invest in sunscreen, good steaks, and gluten-free hard cider now.
Anyway, as we continue to do what is right and #shelterinplace across our great nation, I wanted to share the 5 simple things that are bringing me happiness this week 🙂
They are in no particular order –
- Cherry tree blossoms – I love this time of year – I only wish the blossoms stayed around longer…they are so beautiful.
- Schitt’s Creek on Netflix – My daughter Katie turned me onto this show a few weeks ago and I am totally addicted to it. I have binge-watched the first 5 Seasons twice now and I can’t wait for Season 6. It’s about a rich, eclectic family who loses everything and moves to a small rural town. It’s funny, modern, light-hearted, and you watch the characters evolve each season to become better versions of their former selves.
- Keto Fat bombs – Like many of you, my “quarantine” eating habits have not been awesome so I re-committed to my Keto diet this week. The first few days are always the hardest as you eliminate sugar, alcohol, and most snack foods. A good keto fat bomb provides a delicious fat-filled snack to quench any sweet-tooth. My ‘go-to’ fat bomb recipe is just 3 ingredients: Full fat cream cheese, full-fat peanut butter, and a tiny bit of stevia.
- This ridiculously funny “Easter-themed’ Facebook post by Emily Bodrug: Click here. I actually laughed out loud, in bed, while my husband was sound asleep next to me, and I couldn’t stop. Warning! – there is some adult language in this post so if the “f-bomb” offends you, you should take a pass. Be sure to open the post and look at all the photos 🙂
- Pork and Sauerkraut – many people think of pork and sauerkraut as a New Year’s Day tradition but my family loves it year-round. We just made it on Sunday and finished the leftovers yesterday. It is soooo easy – it cooks all day in a crockpot and melts in your mouth. My secret – you need to buy a pork butt that will easily fit in your crockpot while blanketed in 2 big cans/jars of sauerkraut. I’ll work on a recipe for you in the coming weeks. It’s amazing and it’s Keto-friendly.
